So, in this post, I’m going to share all about prepping the gravy for freezing, how to freeze it, how to thaw and reheat it, and tips to use leftover gravy. 

What Is Gravy?

A gravy is a thickened sauce with a rich flavor that is mostly made from the liquids and pan drippings left over after cooking meat. However, almost any sauce can be called gravy. To make gravy, excess grease is removed and the remaining juice is thickened, most commonly by adding flour or corn starch and stirring until smooth.

There are three types of gravy and if you know what goes into each, you would be better prepared about what to do with leftovers – which gravy needs to be refrigerated or frozen, or consumed immediately. 

01 Brown Gravy

Brown gravy is typically made with flour or cornstarch and includes turkey, chicken, pork, beef gravy, and mushroom sauce. 

02 White Gravy

A milk- or cream-based, flour-based white gravy similar to cream that is frequently put on top of a chicken fried steak. It’s not the best type to freeze and you will soon find out why.

03 Tomato Gravy

Tomato sauce or tomato gravy is what we use for pouring on pasta, spreading on a pizza base, or in between lasagna sheets. You can make tomato gravy at home or buy from the store or order online

There are a few benefits of freezing gravy as it’s a multipurpose sauce that can be paired with meat, fish, and vegetable dishes to lend a warm, savory taste to any bland dish. Now you may be thinking does gravy go bad if left out? Well, yes, leaving it out for more than two hours at room temperature is inviting bacteria to grow in it.  So, does gravy need to be refrigerated? Yes! Let’s look at the benefits of freezing gravy.

Prevents Wastage

You have spent a long time collecting the meat drips, making a flour slurry, and whisking it into the drippings to make a thick, delicious sauce. That needed a lot of elbow grease. You can’t just throw away all the leftover gravy, can you? That’s why it pays off to freeze gravy to prevent waste. 

Extend Shelf Life

Refrigerating leftover gravy only lasts so long – a maximum of 3 to 4 days for flour-based gravy and 2 days if it contains cream. If you can freeze gravy, you are extending its shelf life and use it later. 

Saves Money

If you buy gravy in bulk from the store, you are likely to get a discount. But you can’t use all that gravy up at once. Therefore, you can freeze gravy and save money in the long run. 

Saves Time

When you are cooking a large batch on Thanksgiving or Christmas, frozen gravy can come to your rescue by saving time so that you don’t need to make fresh gravy. Instead, you can utilize the time saved to do other chores. Furthermore, if your family loves to eat leftover gravy often, there’s no need to make it from scratch as you can defrost and reheat it.

The short answer to can you freeze gravy is yes. But it depends on the base of the gravy as to how long you can keep it in the fridge or freezer. That’s because gravy is an emulsion, which is a stable suspension of fat particles in a liquid. The fat is typically provided by butter or animal fat. Due to the emulsified structure, you may spot some changes in the gravy texture because the various components of the sauce respond differently to freezing and thawing. This could result in the separation of the various ingredients and a decrease in consistency.

This is the main reason that the question can you freeze cream gravy requires some explanation. When dairy is frozen, the water content becomes ice. And when you thaw a cream gravy, the ice particles melt and the gravy becomes watery. This causes the cream based gravy to lose both its texture and taste. So, can you freeze milk gravy? How To Prep Gravy For Freezing

When freezing gravy, the sauce must be prepared. Since this is a dipping sauce, it makes sense that most guests will either pour the sauce over their food or dip it straight into a gravy bowl. Serving dishes are the ideal vessel for the sauce. The leftovers must only be handled with a serving spoon or ladle. This will stop bacterial development and contamination.

Whether you are freezing homemade or store-bought gravy, the sauce must always be boiled for 3 minutes before freezing. By doing this, the microorganisms that may otherwise reduce the gravy’s shelf life will be eliminated.

How Can I Freeze Gravy?

Can you freeze gravy correctly for maximum quality? Sure! Freezing gravy properly ensures both food safety and preservation of the velvety texture and rich flavor. You can freeze gravy in two ways – portions or in ice cube trays. 

If freezing in portions, use a small airtight container or freezer bags so that you can defrost the gravy in small batches – only as much as you need in a recipe. However, freezing gravy in ice cube trays has its own benefits. It’s a concentrated format that you can dilute as you wish. It’s easier to measure out gravy using these frozen stock cubes to add to a sauce base.

Step 1: Let the gravy come down to room temperature

Step 2: Get a clean airtight container or freezer bags to store the gravy. 

Step 3: Label the bag or airtight container with the content name and date of freezing. 

Step 4: Portion the cooled gravy into the freezer bag or plastic container and close the bag or the lid properly to prevent freezer burn.

Step 5: Put the container or the bag in the freezer. If using freezer bags, make sure the bags are placed upright to avoid spills inside the freezer.

Step 1: Let the gravy cool down completely. 

Step 2: Pour the gravy into each ice tray cube, leaving some space at the top to allow the gravy to expand when it freezes. 

Step 3: Put the ice cubes on a baking sheet and place them flat in the freezer

Step 4: When frozen, pop out the gravy cubes and transfer them to a freezer bag

Step 5: Label the freezer bag and put the gravy ice cubes back in the freezer. 

How To Defrost And Reheat Gravy

To retain the best texture and flavor, it’s important to know how to defrost gravy and reheat it the right way. To defrost, simply remove it from the freezer, put the bag or container in a bowl, and in the refrigerator overnight or 24 hours before you plan to use it. 

Pro Tip: Avoid leaving out the gravy from the freezer at the counter as it could lead to bacterial growth. 

There are two ways you can thaw frozen gravy – either on the stovetop or in the microwave. To reheat on the stovetop, pour the sauce into a pan and simmer on low flame for two to three minutes, stirring constantly. 

Pro Tip: You can add a thickening agent like cornstarch dissolved in water if the sauce is on the watery side.

You can also reheat the thawed gravy in the microwave. On high power, warm the thawed gravy in one-minute intervals for 2 to 3 minutes, taking care to stir in between.

Lattes are often mistaken for cappuccinos, which are similar but distinct coffee drinks. The main differences between the two are the way they are made, and the amount of milk used.

The layering of ingredients is the main distinguishing factor.

  • Macchiatos are made by pouring 1-2 teaspoons of steamed milk into 1 ounce of espresso.

And let’s not forget about the science of it all. The temperature of the milk, the pressure of the espresso, and the ratio of milk to foam all play crucial roles in making a delicious latte.

Well, the good news is that it’s not as hard as you might think. You don’t need a fancy espresso machine (although it would be great to have one under $200) or a barista’s degree to make a latte at home. All you need is a few basic tools and ingredients.

Have the Correct Equipment

First, you’ll need an espresso machine or a stovetop manual espresso maker.

If you don’t have either of those, you can use a French press or a Moka pot to make a strong cup of espresso coffee.

Finally, you’ll need a milk frother or a small saucepan and a whisk.

Here’s a basic recipe for making a latte at home:

Step 1: Making Your Espresso

Use an espresso machine or manual espresso maker to create two shots of espresso coffee and pour it into a mug (preferably one of these espresso cups!).

Step 2: Steaming or Frothing Your Milk (Using Espresso Machine)

If you’re using a dual boiler machine, like the De’Longhi EC 155, you can brew your espresso and steam your milk simultaneously. Aim for them to finish at the same time.

If you’re using an entry-level budget single boiler machine, you’ll have to do it one at a time.

To create perfect foamed milk:

  • Pour the milk into a pitcher
  • Use the wand of an espresso machine that makes steam and hold it just below the surface of the milk until it doubles in size, creating the frothy foam on top.
  • Move the wand lower and near the side of the pitcher and make a swirling motion, this creates small, smooth bubbles (milk foam) and gives the latte a wet paint-like texture.
  • Steam until the milk gets hot (around 150 degrees Fahrenheit), you can use a thermometer or judge by when the pitcher becomes too hot to hold for more than a few seconds.

Step 3: Heat the Milk to Scalding Temperature and Foam (Without Espresso Machine)

To make latte milk, you need to heat it to 150 degrees Fahrenheit (it should feel hot, but not too hot). You can measure the temperature with a thermometer or test it with your finger.

To make the milk frothy, you can use a milk frother, a French press, or a whisk. You don’t need too much froth, just enough so the milk mixes in with the coffee nicely.

If you’re using a French press, it’s helpful to have at least 1 cup of milk so you have enough for two drinks

After you froth, the milk, wait for 30 seconds to 1 minute for the foamed milk to mix in and separate a bit.

Step 4: Add Steamed Milk to the Espresso, Put Everything Together, and Serve

Both lattes and mochas require an espresso machine to brew the espresso shots.

To make a mocha, the espresso shots are pulled, and an equal amount of chocolate is mixed into the espresso while the milk steams. Once the milk is steamed, it is poured over the top and whipped cream can be added as desired.

Making a Latte at home is just as easy as making a Mocha, as long as you know the proper technique. The ingredients you need are espresso and milk.

While the ideal ratio is 1:2, Lattes are typically made with more milk than espresso.

  • To make a perfect Latte, start by adding an espresso shot (or double shot if you prefer it stronger) into a large ceramic cup or latte cup.
  • Next, prepare steamed milk by heating it on a burner on medium flame and pour it into the cup until it’s nearly full (keep space for the foamed milk).
  • Then, add a layer of milk foam on top of the steamed milk.
  • Gently tilt the cup to mix the milk with the espresso. For a final touch, you can sprinkle cocoa powder on top.

Sometimes you go to a coffee shop, and you see those fancy designs on top of your latte; that’s called latte art.

And let me tell you, it’s not as easy as it looks. But if you’re feeling creative and have an eye for art, give it a try!

As you’ve noticed from the recipes, both Latte and Mocha coffee drinks use steamed and/or frothed milk.

While making the espresso shots is a breeze with a good espresso machine, preparing the perfect milk is whole work of art!  

To make this milk, you can use the steam wand on an espresso machine or a milk frothing device.

The main difference between frothed milk and steamed milk is the number of air bubbles they have. Frothed milk has double the volume of air bubbles than steamed milk.

Steamed Milk

To make steamed milk, you place the steam wand about an inch into cold milk and create a whirlpool effect.

Keep steaming until the milk reaches between 145°F and 155°F (check with a thermometer). You may read this guide on the science of steamed milk to understand why!

Frothed Milk

To make frothed milk, you place the milk frother into the milk to mix air into the milk to produce an airy layer of froth.

As the milk starts to foam on the surface, you move the wand down through the milk until it reaches the bottom of the cup.

The froth forms as the milk volume expand and you need to move the wand further down. Do a little bit of practice, and you’ll get used to using it.

Iced Mocha vs Latte

Both hot and iced versions of lattes and mochas are popular throughout the year, but iced lattes and iced mochas are particularly in demand during warmer months.

It’s important to note that adding hot espresso directly to ice is not recommended as it can cause the espresso to become bitter and melt the ice too quickly. To make iced espresso-based drinks, the espresso shots should be mixed with milk and/or chocolate before adding ice.

Chefs everywhere have taken the liberty to craft various sushi shapes and sizes with non-conventional fillings. As a result, Japanese sushi comes in a wide variety. 

When I first started frequenting sushi restaurants, I couldn’t figure out all the different types of sushi – urumaki vs nigiri, for example. And I was too shy to ask. However, once I was friends with a Japanese chef, it was easier for me to learn about the roll sushi and order the right ones. So, this post is about the main types of sushi explained to my sushi-loving readers!

It is a type of Japanese cuisine that mostly includes vinegar-seasoned short-grained rice served with vegetables, fish (either raw or cooked), and a variety of fillings and toppings. Wasabi, pickled ginger, and soy sauce are commonly offered on the side. It’s common to dip the sushi in soy sauce before eating it. Sushi means “sour” in Japanese and refers to the vinegar used to season the rice.

The main ingredient of sushi is not raw fish as many people believe. It is rice. And if the rice is not prepared in a certain way, sushi won’t qualify as such. For this, you need sushi vinegar. It is simply Japanese rice vinegar in which sugar and salt have been dissolved. This mixture is added to cooked rice to give it a particular flavor and make it sticky so that it can be molded easily. This is called sushi rice

Where Sushi Originated

According to this source, sushi was first mentioned in a Chinese dictionary in the 4th century. It talked about salted fish placed on cooked rice and the subsequent fermentation process that preserved the fish by preventing the formation of bacteria. The concept of sushi originated in Southeast Asia several centuries back and traveled to Japan in the 9th century along with the spread of Buddhism. Many Japanese people turned to fish as a dietary mainstay due to the Buddhist dietary practice of refraining from meat. The Japanese are credited with creating sushi as a full feast, eating fermented rice alongside preserved fish.

Sushi has evolved over the centuries. Modern sushi chefs have developed novel ingredients, cooking techniques, and serving strategies. In the United States, traditional nigiri sushi is still available, although sliced rolls wrapped in soy or seaweed paper (nori) have grown in favor recently.

There are many types of sushi food and sashimi is NOT one of them! That’s because the main ingredient of sushi is sushi rice whereas sashimi is only fish cut into thin slices with no rice. At this point, you may want to know a bit more about sushi vs sashimi before you read further. 

Types of sushi and what’s in them can be categorized depending on their shape, size, ingredients, and even the thickness of the sushi rolls. As a result, you get a few broad types and many sub-types within a few of them. You would be surprised to learn that sushi rolls are a type of sushi by themselves.

Nigiri is made by pressing the sushi rice with hands into a rectangular shape. Then the mound of sushi rice is topped with a slice of raw fish. However, all nigiri doesn’t serve raw fish like maguro (raw tuna) or sake (raw salmon); you can find boiled shrimp (Ebi), grilled eel (unagi), or squid (ika) as nigiri filings. Another type of nigiri sushi is the Tamago nigiri which contains an egg omelet. Some may like to add wasabi or soy sauce as a topping before eating a nigiri.

Maki is the Japanese word for “to roll.” Maki sushi is any type of sushi that has ingredients like fish, meat, or vegetables inside a seaweed wrapper. It is the most common type of sushi you can find, especially in a bento box. The fillings and the vinegared rice in maki are tightly wrapped using a bamboo mat in nori or seaweed and then cut into 6 to 8 bite-size pieces. If you look at a cross-section of the maki, you can see the distinct layers of the fillings, the sticky rice, and the thin layer of nori. 

You can get a variety of maki rolls like Hosomaki which contains only one filling like carrots, tuna, or cucumber, and the sushi size is small; Tekka maki roll which consists of three ingredients – raw tuna, rice, and nori; Futomaki or fat roll that contains a variety of fillings (learn how to roll a futo maki); and Kappa maki roll that contains a cucumber filling wrapped in sushi rice and nori.

A bed of sushi rice blanketed in toppings is the foundation of the less popular sushi style known as chirashi. The toppings that are scattered over the sushi rice are referred to as chirashi. Chirashi means “scattered” in Japanese. But don’t let the phrase mislead you. The toppings on this sushi meal are “scattered” with neatness and accuracy.

The most popular types of chirashi sushi are from Tokyo and Osaka. The Tokyo style of chirashi sushi is also called Edomae Chirashi where vinegared rice is topped with fresh and raw seafood like tuna, squid, scallops, and salmon. In contrast, the Osaka-style chirashi or Gomoku chirashi contains cooked ingredients, looks very pretty, and has flying fish roe and lotus root as common toppings. 

Chirashi is a popular Japanese dish that is served on Hinamatsuri or Girls’ Day or Doll’s Day on March 3rd to celebrate the daughters in the family.

A cone-shaped hand-rolled sushi made with a sheet of nori is the temaki. It’s an individual serving and is difficult to share as it has been formed loosely with the usual sushi fillings like vinegared rice, fish, and others. The main difference between roll vs hand roll sushi may surprise you! While a precise method is followed using a bamboo mat to roll the sushi in Japanese style, temaki hand roll doesn’t follow a very precise preparation. It is meant to be eaten with your hand as the large and conical shape of the temaki doesn’t allow you to eat it with chopsticks.

In inari sushi, the vinegared rice could be mixed with boiled shiitake mushrooms or carrots. The second ingredient is the fried bean curd. Together, these two ingredients create fried tofu pouches with a unique, earthy flavor. The shape of the inari sushi changes according to the region – a triangular shape used in Western Japan while in Eastern Japan and Kanto regions, the inari takes on the shape of a straw bag.

What is uramaki is a question that often figures in the minds of sushi lovers who have just acquired the taste of this tasty morsel. Ura maki is similar to maki with one key difference – whereas fillings and rice are wrapped around nori in a typical maki, the uramaki sushi rolls have the fillings and seaweed paper wrapped around rice. So, instead of the outermost layer of nori that you might expect, you will find the rice on the outside in the uramaki.

A sushi chef in Los Angeles came up with this “inside-out” roll to appeal to American customers who found the nori wrapper unappealing. In the US, the ura maki is well-known and are referred to as “special rolls” on the sushi menu in Japanese restaurants. You may find sesame seeds sprinkled on this Western style sushi to add flavor and crunch to the sticky rice and the fillings. It’s also served with a variety of other toppings and sauces. 

You can get sushi rolls in a grocery or in a Japanese restaurant. I remember I used to buy a pack of rainbow rolls from the 7-Eleven stores in Bangkok when I was too tired to cook for myself. On a side note, it’s not too difficult to make the best kani sushi at home but I wish I knew it then. Well, here’s a rundown of what is in sushi rolls of each type. 

California Rolls

California roll is a type of sushi roll that is made with imitation crab meat or kanikama, cucumber, and avocado with toppings of toasted sesame seeds and flying fish roe. 

Philadelphia Roll

A twist on traditional Japanese sushi, the Philadelphia roll consists of avocado, smoked salmon, asparagus, and cream cheese. 

Alaska Roll

In Alaska roll, you will find raw salmon, cucumber, avocado, and kanikama rolled with a layer of sushi rice and then wrapped in smoked salmon. 

Boston Roll

Like the California roll, the Boston roll consists of cucumber and avocado wrapped with rice but instead of imitation crab, it uses boiled shrimp. As toppings, tobiko in sushi of this type is common. 

Spider Roll

The spider roll is made with cucumber and fried crab with a soft shell. To add a kick, spicy mayonnaise is used as flavoring. 

Rainbow Roll

As the name suggests, this is a colorful type of sushi that’s made of tuna, salmon, yellowtail, avocado, and other ingredients that resemble a rainbow when assembled in a row.

Spicy Tuna Roll

One of my favorites, the spicy tuna roll is not hard to decipher. A spicy sauce like Sriracha is used to wrap the tuna in the sushi roll. 

Miss Pink

This is for those who love fruits – strawberries, to be more precise. Strawberries and sushi rice are wrapped in a crepe to present this fruity pink sushi. This is why sushi is the best as you have the freedom to pick the ingredients you love.

Mango Roll

Another fruity delight in the form of sushi is the mango roll. Nori is replaced with mango slices in this sushi type. Fillings include kanikama, shrimp tempura, and avocado while a thick mango sauce is used as the topping. 

Dynamite Roll

Shrimp tempura and yellowtail are wrapped with cucumber, carrot, and avocado in this type of sushi roll and flavored with a spicy mayo that will explode in your mouth. Hence the name!

Sushirrito

A fusion take on the Mexican burrito, the sushirrito or sushi burrito is a mix of Latin American and Japanese flavors served in the form of a thick roll, much like a burrito. Sushirrito is behind this novel creation and you can order different types of sushirritos wrapped in a large piece of nori sheet to satisfy your meat or fish cravings in a whole new way. They even have a gluten-free, vegan version if you’re against eating animals or gluten allergies. 

You can also get other versions of sushi rolls defined by the region in which they are popular – Florida sushi rolls or New York sushi rolls. For those who have just begun to step into the world of sushi, such rolls may be easier to eat as they don’t contain raw fish. For beginners, sushi with raw fish may be quite daunting.

It is difficult for bacteria and other microorganisms to grow on fresh powdered sugar because of the small size of the particles and low moisture content.

But (There Is Always a but!)

However, powdered sugar can absorb moisture from the air and become clumpy or hard over time.

To prevent this, it is best to store powdered sugar or confectioners’ sugar in a sealed airtight container.

If the sugar does become clumpy, you can try breaking up the clumps by sifting the sugar through a fine-mesh sieve or by grinding it in a food processor or coffee grinder.

While it is unlikely to go bad in the traditional sense, the quality of the sugar may degrade over time, particularly if it is not stored properly.

How Long Does Powdered Sugar Last?

Normally, unopened packaged powdered sugar has a shelf life of around 18-24 months, depending on the manufacturer and the storage conditions.

However, as we said earlier, powdered sugar doesn’t go bad like other foods. You’ll always see the terms “use-by”, “sell-by” or “best by” date for such types of unperishable foods.

They’ll rarely have an expiration date because it doesn’t spoil.

The “best by” date indicates the point at which the sugar should be used for optimal quality, especially when using it to make baked goods like sugar cookies.
